CIRKULO EXPERIENCE: A Delicious Sisig Experience at Cirkulo – The Real Deal!

Yesterday, Cynthia and I found ourselves in Makati and decided to finally try the famous sisig from Cirkulo , known as Cabeza de Cerdo . We wanted to see if it really lives up to the hype—and let me tell you, it did not disappoint! This sisig was traditional—made without the mayonnaise or sunny-side-up egg that’s become common in many versions. It was perfectly balanced—just the right amount of sourness, probably from fresh calamansi, with that signature malutong (crispy) texture that makes sisig so irresistible. The flavors were rich and bold, and it paired wonderfully with garlic rice. Every bite was a delight! We also ordered their Gambas al Ajillo —medium-sized shrimp cooked to perfection. They were springy and tender, with just the right softness that made them incredibly satisfying.
